Today is my self-proclaimed day of goodness. I said it, and it was: we put a deposit down on a new (much bigger!) apartment, & I was hired on permanently at my job. I can’t even say how good this will be for us. Thank you, major internet company who writes our paychecks.
I do the dishes every night. I cannot stand having dirty dishes sitting around all day. After twenty-five years, I finally realized my mother was right.
Gluten-free baguettes, in our new french bread pan. To be honest, I had some doubts about the pan, but the bread. It is frenchy. It is crispy-crunchy all the way around. It has those delightful little bumps on the bottom. The inside of the bread is the closes I’ve come so far to g-free texture that simulates “real” bread.
Ignore the lumps.

Okay, friends, let’s be honest. Gluten-free bread can be…lacking. In flavor, in soft spongy texture, in breadness. When we decided to go gluten-free, finding a different type of bread was the first thing on the list. We tried everything you could buy at the store, from horrible rice-based loaves masquerading as bread, to loaves that tasted like bread, but were unbelievably dry. But take a look at this:

This is BREAD. It has flavor. It gives when you press a finger into it. It’s sproingy. And it tastes delicious. This bread is home-made. I made it. In an hour. That, my friends, is amazing. The recipe comes from You Won’t Believe It’s Gluten-Free, which is by far my new favorite g-free cookbook. The recipes are simple, for the most part using one or two flours, and super-easy to prepare.

Order yourself a copy. I have to bake some more bread.
